Eat Well, Spend Less: Black Bean Burrito Bowls

Still nervous about getting your Chipotle fix after their recent food scare? We sorta are too. But, don’t worry - we have concocted our own “DIY burrito bowl” just for you!

This dish serves 2-4 people and takes around a half an hour for prep and cook time. Enjoy!
Here’s what we used…
  • 1 can black beans, drained and rinsed
  • 1 cup uncooked rice
  • 1 cup tomato salsa
  • 2 Roma tomatoes, diced
  • 1 cup shredded colby jack cheese
  • ½ cup southwest chipotle salad dressing
  • 3 cups Romaine lettuce, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1-2 large chicken breasts, boneless & skinless
  • Chicken seasoning
  • 1 tablespoon olive oil
  • 1 garlic clove (optional when cooking chicken)
  • 1 lime, sliced
  • 1 avocado, halved, pitted, diced and peeled

However, feel free to deviate as you’d like from our recipe -  add or swap in your favorite meats and veggies!
Instructions:
  • Cook rice in 1 ½ cups of water, according to instructions on its package
    1. Stir in salsa, let cool and set aside for later
  • Slice chicken into small cubes
    1. Cook with olive oil, garlic & seasoning until golden brown
  • Divide chicken, black beans and rice into bowls for serving
  • Top with tomatoes, cheese, lettuce, cilantro, lime juice, avocado and dressing
