“Andy Pope at the Willett Distillery introduced me to this concept of 'The Third Place,'” Belly bar and front-of-house manager Greg Haefner told Savor Columbia. “Besides work and home, this is where you go to celebrate the best day of your life or even the not-great days. The Third Place offers people a place where they can come anytime and feel comfortable, welcome, and at home.”

“The whole idea for the bar is to bring back cocktails that shift the focus from ‘what kind of new recipes can we make?’ to reviving classic cocktails that emphasize the cool new spirits available today,” Greg said. 


While you may be familiar with classic cocktails like Old Fashioneds, Gimlets, or Manhattans, many turn-of-the-century or prohibition-style cocktails fell out of vogue long before many cocktail connoisseurs even began drinking. 


“Harry Craddock came up with the Choker in 1930, but he didn’t have access to sherry cask scotch then. We do now, and we can elevate that cocktail with these ingredients,” Greg said. 


Popularized in his 1930 recipe guide, “The Savoy Cocktail Book,” famed bartender Harry Craddock originally crafted the Choker using whisky, absinthe, and absinthe bitters. As spirits have progressed over the last century, classic cocktails like these are slowly returning to bar menus, albeit with modified ingredients better suited to today’s palates. 


You won’t see popular brand names behind the bar when you visit Belly for dinner or a drink. Instead, you’ll be greeted by unique spirits, liqueur, bitters, garnishes, and more. Each bottle will be selected intentionally to craft something unique and delicious. 


“I wanted the ethos at the bar to be ‘Everything we have is there for a reason.’ We chose this spirit for its unique flavor or the story of the family who made it,” Greg said.


With this celebration of classics becoming new again at the bar and local flavors coming to life in the kitchen, Belly’s new dinner experience will have so much to offer to both long-time fans and new diners.
